evidence that non-traditioal business models are alive and well in america, i present for your consideration, the restaurant with no menu and no cash register.
inspired or crazy, denise cerreta jumped into a model that spurns every conventional concept of running a restaurant (except maybe the location thing).
they’re making news (well, made news, i’m picking up on this late), apparently making money, and got my attention. next time i’m in salt lake city… they might just get some of my dollars.

is it a non-profit model in a for-profit business? liberal pricing? conservative production? interesting? crazy?
another restaurant that’s doing the same sort of thing — http://www.realgoodfood.com/family_supper.html — but you can only eat there if a friend invites you.

I met Denise last year and we talked briefly about the pay-what-you-can concept. I’m interested in starting something similar in the Boston area. How can I reach Denise and are there other similar models I can check out? (Thanks for the realgoodfood.com lead).

The One World Cafe is a real treat, and an amazing concept. They have no phone, so contact might be an issue. Their street address is 41 S 300 E, SLC UT, 84103. I’m nearby and would gladly pass on a printed email.

For all of the naysaying, Denise is forging forward. After 2 1/2 years in business, she recently incorporated with the state of Utah, and is waiting for non-profit status from the IRS. When she receives it, she’ll be ready to start collecting money from philanthropists to put her cafes around the country.
